Varietal composition: 100% Cortese
Terroir: The vineyards are located on high hills in the Gavi area (Rovereto Superiore), on calcareous-clay soils. The region is characterized by a temperate climate, Mediterranean winds and daily temperature amplitudes, which contribute to intense aromas, acidity and minerality
Vinification: The grapes are harvested by hand at low yields (below 70q/ha). Fermentation takes place in stainless steel tanks at a controlled temperature, without contact with oak, to preserve crystalline freshness. The wine is aged on the fine lees before bottling.
