Bononia Estate is a modern winery located on the banks of the Danube, in the village of Gomotartsi. Combining modern technologies and sustainable viticulture, the winery focuses on local varieties and the authentic expression of the Danube terroir.
Varietal composition: 100% Dimyat
Terroir: The vineyards are planted on alluvial-limestone soils near the Danube River, which provide good drainage and minerality. The region is characterized by a temperate climate and significant day-night temperature differences, which favor the accumulation of aromatic substances and freshness in the grapes.
Vinification: After hand harvesting, the grapes are carefully sorted and pressed. Fermentation takes place at low temperature in stainless steel vessels, in order to preserve the varietal purity and freshness. The wine is aged for a short time on the fine lees, without the use of oak.
Organoleptic characteristics
Aroma: Fine and airy nose with floral tones, green apple, citrus and a fresh herbal note.
Taste: Light, elegant and refreshing, with a juicy structure and a clean, mineral finish.
Food pairing: Suitable for tuna salad, grilled shrimp, light cheeses or spaghetti with lemon sauce and capers.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
