An unusual and complex Syrah rosé, for fans of more structured and dark rosés! Made using the Saignée method (draining the juice from the vessel after several hours of maceration with the skins, without pressing) from the best grapes from a selected plot, picked at full phenolic maturity as for red wine. Fermentation is spontaneous, with the natural microflora of the vineyard or the so-called "wild" yeast". Fermentation and aging are a total of 9 months in 7 Bulgarian 400-liter oak barrels and 1 Hungarian 500 l, all used.
This is a serious, gastronomic rosé - a great partner for a variety of dishes and an alternative to light red wine. A wine for all seasons and at the same time with excellent potential for development in the bottle.
The wine is not cold-stabilized - harmless crystalline sediment may appear. Produced in a limited quantity of 3,716 bottles.

The vineyards are located in the South Sakar region - one of the most suitable regions for red varieties in Bulgaria. The soils are sandy-clay, and the climate is warm and dry, with large temperature amplitudes between day and night, which helps to develop rich aromas and freshness in the wines.
Tasting Description:
A deep pink color with delicate coppery hues. A complex nose of ripe red fruits and herbs, which is also revealed in the flavor aromas. The body is juicy and rounded, with nuances of spices, cherry and caramel. A soft finish of ripe strawberry and blackcurrant with a long, harmonious aftertaste. Aging potential (2025-2030)
Food pairings:
vegetarian dishes, meat and fish - from duck breast and roasted chicken with herbs to grilled fish, Mediterranean specialties and medium-aged cheeses. A wonderful partner for slightly spicy dishes and cured meats, which can replace a light red wine in any season
