Zaara Estate is a boutique family winery located in the village of Glavan, on the border between Sakar and the Thracian Lowlands. The vineyards are owned by the winery and are grown sustainably, and its wines are distinguished by pure varietal expression and attention to detail in every phase of production.
Varietal composition: 100% Syrah
Terroir: The vineyards are located on sandy-stony soils with good drainage and solar exposure. The microclimate at the foot of Sakar is characterized by warm days, cool nights and moderate rainfall - conditions that allow the full ripening of Syrah, without loss of freshness.
Vinification: The grapes are hand-picked in the early morning hours. After a short contact with the skins, the juice is separated by gentle pressing. Fermentation takes place at low temperature in stainless steel vessels, to preserve the fresh aromas. The wine is briefly aged on the fine lees until bottling.
Organoleptic characteristics
Aroma: Notes of raspberry, pomegranate, juicy cherry and pink pepper, with a delicate floral accent.
Taste: Fresh, juicy and balanced, with a pronounced minerality and a spicy, dry finish.
Food pairing: Ideal with salmon tartare, roasted beetroot and goat cheese salad or grilled rosemary chicken.
