Stefan Pirev Wines is a small family winery located in Northwestern Bulgaria, near Vidin. It focuses on sustainable viticulture and a selection of carefully selected plots, with a focus on distinctive varieties and a minimalist style of vinification.
Variety: Pinot Noir
Terroir: The vineyards are located in the Danube Plain, on limestone and clay-sandy soils. The climate is characterized by warm summers and relatively cool evenings, which help develop the aromatic profile and preserve the freshness of the grapes.
Vinification: The wine is produced using the direct pressing method. After a short maceration and gentle extraction of color and aroma, fermentation takes place at low temperature in stainless steel tanks, in order to preserve the varietal freshness and elegance. The wine is not oak-aged.
Organoleptic characteristics
Aroma: Fine red fruits – strawberry, raspberry and cherry, complemented by floral nuances and a light citrus touch.
Taste: Fresh and harmonious, with delicate acidity, good structure and a clean finish with notes of red berries and a mineral line.
Food pairings: Suitable for salads with prosciutto, smoked salmon, cold appetizers and goat cheese.
Serving temperature: 8°–10°C
Aging potential: Best consumed within 2 years after harvest
