Terroir:
The vineyards are located near the village of Karabunar, in the heart of the Thracian Lowlands. The area is characterized by a warm continental climate, long sunny days and cool nights, which help preserve the freshness and aromatic potential of the grapes. The soils are clay-limestone, with excellent drainage - a factor that ensures minerality and finesse in the wines.
Vinification:
The grapes are hand-picked in the early morning hours ("Early Birds") in order to preserve freshness and natural aromas. After a short contact with the skins to obtain a delicate color, the must is fermented at low temperature in stainless steel tanks. Without malolactic fermentation, in order to preserve the lively acidity and pure fruit character.
Organoleptic characteristics:
Color: Light pink, with delicate salmon hues.
Aroma: Elegant and fresh, with notes of wild strawberries, raspberries, red apple and a light floral accent.
Taste: Light and juicy red fruits, pleasant minerality and pronounced freshness. Fine, harmonious aftertaste with a hint of citrus and strawberry.
Food pairing:
A wonderful wine for light summer dishes - salads, seafood, salmon, grilled chicken, pasta with creamy sauces or as an aperitif.
Serving temperature: 8°–10°C
Aging potential: Best consumed young - within 1–2 years.
