Villa Melnik is a modern family winery located near the village of Harsovo, in the Melnik region. Its vineyards stretch along the southern slopes of the Pirin Mountain, at an altitude of 550 m. The winery is distinguished by sustainable viticulture practices and a precise approach to vinification, with an emphasis on local varieties.
Variety: Cabernet Sauvignon and Shiroka Melnika Loza
Terroir: The vineyards are located at the foot of Pirin, on limestone and sandy-clay soils with good drainage. The microclimate is transitional Mediterranean with many sunny days, cool nights and moderate rainfall - conditions that ensure the preservation of the freshness and aroma of the grapes.
Vinification: The grapes are hand-picked in the early morning hours, cooled and carefully pressed. After a short contact with the skins, fermentation at low temperature in stainless steel vessels follows to preserve the subtle fruity aromas. The wine does not undergo malolactic fermentation to preserve its fresh character.
Organoleptic characteristics
Colour: Light pink with coral highlights.
Aroma: Fresh and elegant, with notes of wild strawberries, cherries, pink grapefruit and wildflowers.
Taste: Fruity and lively, with fine acidity and delicate minerality. The finish is clean and slightly spicy.
Food pairing: Suitable for prosciutto and fruit salads, Asian dishes, grilled fish and goat cheeses.
Serving temperature: 8°–10°C
Aging potential: To be consumed young, up to 2 years after harvest
