Produced by Katarzyna Estate – one of the established Bulgarian wineries, located near the village of Mezek, in the southern part of the Sakar Mountains. Founded in 2004, the winery combines French wine style with the unique terroir of the region and is the winner of numerous international awards.
Varietal composition: Cabernet Franc and Syrah
Terroir: The vineyards are located on hilly terrain with southern exposure, on clay-limestone soils. The region has a warm, dry climate, favorable for the full ripening of red varieties and the development of a rich aromatic profile.
Vinification: The grapes are hand-picked at optimal ripeness. After a short maceration, gentle pressing and fermentation at low temperature in stainless steel vessels follow. Partial aging on fine lees contributes to the structure and complexity of the wine.
Organoleptic characteristics
Aroma: Expressive nose with nuances of cranberry, raspberry and delicate spice

Food pairing: Excellent with goat cheese tart, veal carpaccio, or white meats with herb sauces
