E.Miroglio is a modern winery located near the village of Elenovo, in the Thracian Lowlands. The project was created by the Italian textile industrialist Edoardo Miroglio and combines Italian know-how with the potential of the Bulgarian terroir. The winery is distinguished by its pursuit of elegance, sustainability and precision in winemaking.
Varietal composition: Pinot Noir
Terroir: The vineyards are located on hilly terrain with a southeast exposure, on soils with good drainage - clay-limestone and sandy structures. The climate in the area is temperate continental, with distinctly warm summers and favorable temperature differences between day and night.
Vinification: The grapes are hand-picked in the early morning hours and cooled immediately after transportation. After a short contact with the skins, a delicate pressing is performed. Fermentation takes place at low temperature in stainless steel vessels, in order to preserve the aromatic purity. The wine does not undergo oak maturation.
Organoleptic characteristics
Aroma: Subtle aromas of wild strawberries, pink grapefruit and red cherry, with a delicate floral nuance.
Taste: Fresh and airy, with structured acidity, juicy texture and an elegant, dry finish.
Food pairings: Ideal with ricotta and herb tart, rosemary chicken on a platter or citrus and seafood salad.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
