Grape varieties: Nebbiolo, Mavrud, Syrah
Terroir: The vineyards are located in the area of the village of Zmeevo, with soils that are predominantly sandy-clay and limestone, providing good drainage. The climate is continental with hot summer months and cool nights, which allows the varieties to ripen slowly and retain their freshness and fruity aromas.
Vinification: The grapes are hand-picked and fermented in traditional qvevri (clay vessels), which gives the wine additional depth and unique character. The aging process in clay vessels adds slightly earthy and mineral nuances to the taste.
Organoleptic characteristics
Colour: Shiny pink with bright red hues reminiscent of ripe strawberries.
Aroma: Fresh and fruity, with notes of red fruits such as raspberries and strawberries, with slightly herbal accents.
Taste: Light to medium body with balanced acidity that gives a refreshing structure. The taste is fruity and slightly spicy with mineral notes that give complexity.
Food pairings: Suitable for roasted chicken with lemon and herbs, grilled vegetables, pasta with green sauces, avocado salad and smoked salmon.
Serving temperature: 8°–10°C
Aging potential: Up to 3 years, the wine will retain its freshness and fruitiness for the first 2 years after harvest.
