Each vintage is produced only in exceptional years and presents a unique blend of Chardonnay and Pinot Noir from the best terroirs of Champagne. Terroir
The grapes for Dom Pérignon come from prestigious Grand Cru vineyards, as well as from the historic plots of the Abbaye d’Hautvillers. The soils are rich in chalk, which gives a mineral character, freshness and delicate texture. The mild continental climate of the region allows for slow maturation and the creation of wines with exquisite balance and elegance.
Vinification
A blend mainly of Pinot Noir and Chardonnay, depending on the vintage.
Alcoholic fermentation in stainless steel tanks.
Secondary fermentation and long aging on the lees (over 8 years) for maximum depth, creaminess and complexity.
Disgorged immediately before release.
Organoleptic characteristics
Aroma
Elegantly complex nose with notes of ripe lemon peel, pear, white flowers, almond, mineral tones and delicate toasted accents. There are nuances of apricot, brioche and fresh citrus.
Taste
Precise, structured and multi-layered taste. Fine perlage, creamy texture, excellent freshness and deep minerality. At the end - a long, harmonious and salty-mineral finish, characteristic of the great vintages of Dom Pérignon.

Ideal choice for lobster, oysters, campaign, caviar, delicate fish dishes, Japanese cuisine (sashimi, sushi), fine cheeses, tartare and gastronomic appetizers. Suitable for both special occasions and haute cuisine.
