This is the 48th different blend of the prestigious sparkling wine Franciacorta Cuvée Prestige of the Ca' del Bosco winery.
Type: sparkling white wine
Varietal composition: 80.5% Chardonnay + 18% Pinot Noir + 1.5% Pinot Bianco
Vineyards: The grapes come from 185 Chardonnay vineyards with an average age of 25 years, located in the municipalities of Erbusco, Adro, Catzago San Martino, Corte Franca, Iseo and Passirano; 8 Pinot Bianco vineyards with an average age of 32 years, located in the municipality of Passirano; 52 Pinot Noir vineyards with an average age of 21 years, located in the municipalities of Erbusco, Provalzo d'Iseo and Passirano.
Blend: 88% wines from the 2023 harvest + 10% reserve wines from the 2022 harvest + 2% reserve wines from the 2021 harvest
Sugar content: 1.5 grams/liter
Vinification: The base wines of Cuvée Prestige are the result of a careful selection of grapes and an expert vinification, carried out in full compliance with the Ca' del Bosco method => the grapes, hand-picked in the second half of August in small crates, are classified and cooled, then pass through a special washing and hydromassage system using three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the must for the base wines ferments in steel tanks at a controlled temperature until the following March (7 months) - > this is the period needed for the wine to clarify, mature and fully reveal the character of the grapes. Blending follows to create the cuvée. Only after aging on the lees for at least two years can this Franciacorta express its full richness and identity.
Disgorging is carried out in the absence of oxygen, using a unique system (avoiding oxidative stress and the addition of sulphites) designed and patented by the Ca' del Bosco winery. This makes the Franciacorta of the winery cleaner, more pleasant and longer-lasting. Each bottle is marked to guarantee traceability.
Organoleptic characteristics:
Colour: brilliant, straw yellow with light golden hues, fine and persistent perlage
Aroma: intense, complex and refined, with notes ranging from bread crust to butter, citrus and nutmeg
Taste: fresh and dry, with good spiciness and excellent persistence on both the palate and the aroma
Food pairing: oysters, sushi, fish tartare, light seafood pastas or fresh cheeses
