Villa Yambol is one of the oldest wineries in Bulgaria, founded in 1924. The winery combines tradition and modern technology, emphasizing the local terroir and the selection of the best vineyards, including those in the Topolitsa region.
Varietal composition: Syrah
Terroir: The grapes come from vineyards near the village of Topolitsa, located on hilly terrain with southern exposure. The soils are sandy-clay with good drainage. The region is influenced by the mild Mediterranean currents and provides a long ripening period, ideal for Syrah.
Vinification: After manual harvesting and selection, the grapes ferment at a controlled temperature with prolonged maceration. Aged for 12 months in Bulgarian and French oak barrels, which contribute to the complexity and structure of the wine.
Organoleptic characteristics
Aroma: Spicy nose with dominant notes of black pepper, prunes, dark chocolate and dried herbs.
Taste: Full and ripe taste with soft but rich tannins, balanced acidity and a long, warming finish.
Food pairing: Suitable with grilled veal, lamb ribs, game dishes or spicy cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 6–8 years after harvest
