Georgiev / Milkov is a boutique winery, founded by two oenologists with many years of international experience, focusing on terroir wines with character and individuality. The vineyards are located in selected areas of the Thracian Lowlands, and each wine expresses the soil and climate of the specific plot.
Varietal composition: Rubin
Terroir: The wine originates from the village of Brestovitsa, located on rusty cinnamon soils, rich in iron and minerals. The region is characterized by a warm continental climate, with long dry summers and cool nights, which help to accumulate sugars and preserve acidity.
Vinification: The grapes are hand-picked in the early morning hours. After careful selection, fermentation with wild yeast and prolonged maceration on the skins follows. The wine ages for 9 months in used French barriques, with minimal intervention and no filtration before bottling.
Organoleptic characteristics
Aroma: Complex nose with dominant aromas of ripe black cherry, dried plum, dark chocolate and hints of black pepper and leather.
Taste: Tight and energetic body with powerful but finely expressed tannins, fresh structure and a long, slightly spicy finish with mineral accents.
Food pairing: Ideal with grilled lamb ribs, beef tartare or cured meats and mature cheeses with nutty nuances.
Serving temperature: 16°–18°CAging potential: Up to 6–8 years after harvest
