Cantine del Sud – Due Palme – one of the most recognizable and successful cooperative wineries in Puglia, known for its traditional work with local varieties and the creation of authentic, powerful southern Italian wines. The San Gaetano line comes from carefully selected vineyards in Manduria – the most valuable terroir for Primitivo.
Terroir: The vineyards are located on red, iron-rich soils (“terre rosse”), mixed with limestone and stony deposits. The hot Mediterranean climate, low rainfall and constant winds lead to high sugar content, concentration and rich aromas – a distinctive feature of Primitivo di Manduria.
Vinification: The grapes are harvested at high ripeness. After selection and delicate crushing, fermentation at a controlled temperature follows with prolonged maceration to achieve deep color and density. The wine is aged in oak barrels, which adds complexity, sweet spices and softness.
Organoleptic characteristics
Aroma: Rich and warm nose with aromas of ripe black fruits – blackberry, black cherry, prunes, as well as notes of vanilla, cocoa, liqueur tones and Mediterranean spices.
Taste: A dense, velvety and powerful wine with soft, ripe tannins. The taste is concentrated – sweet black fruits, chocolate, light spiciness and a memorable, long, warm finish.
Food pairings
Ideal with beef steaks, lamb, game pasta, mature cheeses, barbecue, spicy sausages and rich meat dishes from southern cuisine.
Serving temperature: 16°–18°C
Aging potential: 4–6 years after harvest
