Borovitsa Winery – a family boutique winery located near the Belogradchik Rocks, in the village of Borovitsa, Northwestern Bulgaria. The winery focuses on the production of small batches of wines with a pronounced terroir character, using modern technologies and hand-picking of grapes.

Terroir:
The vineyards are located in the Danube Plain, in the area of the village of Borovitsa, on alluvial-carbonate soils. The region is characterized by a temperate climate, with warm summers and cool winters, which contributes to the balanced maturity of the grapes and the development of elegant wines.
Vinification:
The grapes are hand-picked and undergo careful selection. Fermentation takes place at a controlled temperature, followed by aging in new oak barrels for 18–26 months, which gives the wine additional complexity and structure.
Organoleptic characteristics
Colour: Intense ruby with slightly brownish hues.
Aroma: Complex nose with notes of red fruits, spices and slightly toasted bread.
Taste: Full and velvety, with dominant flavours of ripe cherries, cranberries and subtle nuances of vanilla and spices. Well-balanced acidity and a long, aromatic finish.
Food pairings:
Excellent with red meat dishes such as pork chops, baked or grilled veal, as well as dishes with spicy sauces.

Aging potential:
Up to 5–6 years after harvest, under appropriate storage conditions.
