Pelofino is the young and vibrant expression of Fattoria le Pupille. It is a soft, fruity wine, in which the main grape variety is Sangiovese - the symbol of Tuscan red wines.
Variety: 60% Sangiovese + 20% Cabernet Sauvignon + 20% Merlot
Soils: from those with a clay-silty texture to soils characterized by a sandy-clay composition with the presence of marl and limestone
Formation: Cordon, Guyot
Harvest: first half of September for Merlot and Sangiovese, first week of October for Cabernet Sauvignon
Vinification: 15 days of maceration; fermentation in stainless steel tanks at a temperature of 24°C; aged for 5 months in steel tanks

Colour: bright ruby red
Aroma: red fruits, raspberries, strawberries and red citrus fruits with hints of white pepper and herbs
Taste: crisp red fruits on the palate, juicy and well balanced
Food pairing: traditional cold cuts, medium-aged cheese, meat, pizza, pasta/baked pasta, risotto
Aging potential: 5 years
