Lavinia Estate is a young but ambitious Bulgarian winery located in South Sakar – one of the most suitable regions in our country for the production of high-quality red wines. The winery works with modern equipment and an emphasis on varietal purity, balance and elegance. The Atara series is focused on single-varietal wines that show the maximum potential of the region.
Terroir
Transitional continental climate with cool, dry summers and warm winters. The region is characterized by the natural phenomenon of evening breeze – a light wind that appears in the evening and stops before noon, as a result of the different heating of the air between the plains and the mountains. Evening breeze is an excellent regulator of alcoholic fermentation and favors the formation of aromatic substances in the grapes. The soils are sandy-clay and clay-limestone.
Vinification
The cooled grapes pass through a pre-vibration table for manual selection of bunches. The crushed whole grains enter fermenters with a volume of 2 to 8 cubic meters, where cold enzyme maceration is carried out for 8 days, followed by fermentation at a temperature of 24-26 ° C. Aging "sur lie" for 18 months in French oak barrels, clarification, stabilization and bottling.
Organoleptic characteristics
Elegant, velvety wine with a soft, cozy and sensual fruit character - dominated by ripe black cherry and plum. Warm, deep and concentrated fruit tones. Aging in new French oak Baron Tonnellerie - adds silky softness and noble "sweet spice" - delicate nuances of vanilla, cinnamon, fine cloves and elegant nuances of noble oak. The taste is rounded, warm and extremely harmonious, with ripe, velvety tannins. Long, soft and cozy finish, carrying a refined noble spicy character.
