Zaara Estate – a boutique winery located in the southern part of the Sakar Mountains, Bulgaria. The winery is distinguished by its deep respect for nature and local varieties, combining modern technologies with sustainable viticulture. The wine “Dogma” is part of a special selection and is aged in a cage, providing it with a unique microclimate for maturation.
Varietal composition: 100% Mavrud
Terroir: The vineyards are located on sunny hills with southern exposure at the foot of Sakar. The soils are stony-clay, and the climate is warm and dry, with a favorable influence from the Black Sea. This gives the grapes exceptional concentration and depth.
Vinification: Hand-picking of the grapes at optimal ripeness, followed by cold maceration and slow fermentation in stainless steel vessels. The wine is then aged for 12 months in oak barrels and in a cage, which gives it exceptional complexity, softness and potential for development.
Organoleptic characteristics:
Aroma: Rich and complex, with deep notes of berries, dried figs, dark chocolate, tobacco and noble oak.
Taste: Dense and elegant body with velvety tannins, pronounced structure and a long, spicy-fruity finish. Remarkable harmony between fruit and oak.
Food pairing: Goes great with game, veal, lamb, mature cheeses and rich meat dishes.
Serving temperature: 16°–18°C
Aging potential: 8–10 years under appropriate conditions.
