Variety : 100% Tinta del País ( Tinta del País is the name given to the Tempranillo grape variety in Ribera del Duero. This is one of the many names given to this grape (one of the most common in Spain) depending on the regions and adaptation of this variety to the geographical conditions of each area)
From the Fuenteco-jo, La Cueva and Otero Joven vineyards around the winery in Anguix, in the province of Burgos, in the autonomous region of Castile and León.
The vines are planted on silty-clay soils at 780m above sea level.
Hand-picked grapes, carefully selecting the best bunches, which are placed in 20 kg boxes. and which, upon arrival at the winery, undergo a second, meticulous manual inspection to separate the best clusters of grapes.
Following gentle removal of the stems and crushing, alcoholic fermentation begins at a temperature below 28°C.
After 19 days of fermentation and maceration, malolactic fermentation follows in French oak barrels with weekly stirring of the lees for a period of two months.
Aging : 75% in new French oak barrels + 25% in second-hand French oak for 16 months, with three changes of barrels by traditional candle methods, from barrel to barrel, to manually separate the lees and avoid aggressive filtering.

Tasting notes:
Intense purple color with a dark red edge.
Forest fruit notes stand out: blackcurrant jam, blackberries and blueberries wrapped in mocha, confectionery and spices like black pepper, licorice and cloves in the background. Balanced, lively and fresh mouthfeel, with characteristic fine, gentle tannins.
The aftertaste is fresh, well rounded with a very pleasant finish.
It is recommended for appetizers, vegetables and rice dishes, poultry and game birds, fish stews, mature cheese, roast lamb and lamb roulade.
