Lavinia Estate is a modern winery located at the foot of South Sakar - one of the most valuable wine regions in Bulgaria. It is known for its pursuit of high-quality viticulture, modern technologies and clean, elegant style. The Atara series presents single-varietal wines that show the maximum terroir potential of the region and its red varieties.

Terroir:

Transitional continental climate with cool, dry summers and warm winters. The region is characterized by the natural phenomenon of evening breeze - a light wind that appears in the evening and stops before noon, as a result of the different heating of the air between the plains and mountains. Evening breeze is an excellent regulator of alcoholic fermentation and favors the formation of aromatic substances in the grapes. The soils are sandy-clay and clay-limestone.

Vinification
The cooled grapes pass through a pre-vibration table for manual selection of bunches. The crushed whole grains enter fermenters with a volume of 2 to 8 cubic meters, where cold enzyme maceration is carried out for 8 days, followed by fermentation at a temperature of 24-26 ° C. Aging "sur lie" for 18 months in French oak barrels, clarification, stabilization and bottling.

Organoleptic characteristics

A powerful, deep and aristocratic wine with impressive concentration and expressive character. The aromatic profile is dominated by blackcurrant, black cherry and blackberry, supported by cedar nuances and noble tobacco. Aging in new French oak Baron Tonnellerie brings complex nuances of quality dark chocolate and noble oak - vanilla, fine cocoa, slightly toasted almonds, and an elegant spicy touch. The taste is dense, structured and energetic, with tight but extremely fine tannins. The finish is long, balanced with a mature structure, aristocratically noble, with a sense of depth and strength.
