Katarzyna Estate is located in close proximity to the Greek border, in the picturesque end of the Eastern Rhodope Mountains. Combining innovative practices with respect for nature, the winery creates modern wines with a distinct signature and international style.
Varietal composition: Cabernet Sauvignon
Terroir: The vineyards are located on sandy-stony soils, with southern exposure and good water drainage. The region is characterized by a warm climate, which helps the grapes to fully ripen and develop ripe, concentrated flavors.
Vinification: The grapes are hand-picked in the early morning hours, cooled and undergo a gentle sorting. Fermentation takes place in stainless steel vessels at a controlled temperature, with maceration to extract color and structure. Part of the wine is aged in French oak barrels.
Organoleptic characteristics
Aroma: Ripe aromas of blackcurrant, black cherry and black pepper, highlighted by light notes of oak and cocoa.
Taste: Full-bodied, juicy-fruity start, well-integrated tannins and a long, slightly spicy finish.
Food pairings: Suitable for mature hard cheeses, beef steak or braised lamb.
Serving temperature: 16°–18°C
Aging potential: Up to 6 years after harvest
