Medi Valley Winery – a Bulgarian family winery dedicated to the production of high-quality wines with authentic terroir character. The winery combines modern winemaking practices with respect for traditions and nature, selecting only selected plots of vineyards in favorable regions of Bulgaria for the variety.

Terroir:
The vineyards are located in a warm, sunny area with well-drained soils, rich in limestone and clay. The climate is continental with clearly defined seasons, which allows the grapes to develop a rich aromatic profile, good ripeness and elegant tannins.
Vinification:
The grapes are hand-picked at optimal ripeness. After selection of the bunches, a long maceration and fermentation at a controlled temperature in stainless steel vessels follows. Part of the wine is aged in oak barrels to enrich the structure and aromatic complex.
Organoleptic characteristics
Color: Deep ruby color with violet hues.
Aroma: Intense nose with notes of black fruits, blackberry, plum and violet, supported by nuances of black pepper and slightly smoky tones.
Taste: Full and harmonious, with soft tannins and well-integrated acidity. The finish is long, with spicy and fruity nuances.
Food pairings:
Suitable for grilled red meats, game, pasta with rich sauces and hard cheeses.
