Château Copsa is a family winery in the heart of the Rose Valley, which relies on a sustainable approach, manual selection of grapes and vinifications that emphasize the individuality of the terroir.
Varietal composition: Cabernet Franc, Syrah, Cabernet Sauvignon
Terroir: The vineyards are located near the village of Moskovets, on sandy-clay soils rich in carbonates, at an altitude of about 450 m above sea level. The temperate climate with long, dry summers and cool nights helps to slowly accumulate aromas and maintain balance in the fruit.
Vinification: The grapes are hand-picked and vinified separately. After cold maceration and fermentation with natural yeasts, each batch is aged for 12 months in French oak, after which the blend is made. The wine rests additionally in the bottle before being released on the market.
Organoleptic characteristics
Aroma: Complex nose with notes of dark berries, black olive, roasted pepper and graphite, wrapped in fine vanilla oak.
Taste: Full-bodied, with good structure and ripe tannins. Balanced, with a spicy, slightly earthy finish and a long aftertaste.
Food pairings: Goes well with slow-cooked veal, grilled lamb chops or noble blue cheeses.
Serving temperature: 16°–18°C
Aging potential: 6–8 years after harvest
