Vinification:
Sorting of whole grapes using the only Delta R2 Vistalys optical sorter in Bulgaria. Cold maceration at 8ºС in oak vats with a capacity of 6t. and thermally insulated stainless steel fermenters of 7000 l each. Controlled alcoholic fermentation with post-fermentation infusion. Spontaneous malolactic fermentation in new French barrels. Aging and storage for 18 months in new French oak barrels at controlled temperature and relative humidity.
