Produced by Edoardo Miroglio Winery – a family winery located in the area of the village of Elenovo, municipality of Nova Zagora, in the PGI “Thracian Plain”. The winery works with careful selection of grapes and sustainable winemaking techniques to express the character of the vineyards and terroir.
Varietal composition: 100% Cabernet Franc
Terroir: The vineyards are located in the Eastern Thracian Plain, Bulgaria. The terrain and soils in this area provide good conditions for the variety – with fruits developing ripeness and juiciness in combination with well-balanced acidity and tannins.
Vinification: The grapes are carefully harvested and selected. After fermentation and temperature control, the wine is aged in barrels (French oak) for a time sufficient to develop structure and complexity. Specific details such as the exact aging time may vary depending on the harvest.
Organoleptic characteristics
Aroma: Intense, with notes of red and dark fruits – for example cherry, blackberry, with light spicy and herbal nuances.
Taste: Full-bodied, with a good balance between tannins and freshness, with a long finish and an aftertaste of ripe fruits and spices.
Food pairings: Suitable with grilled red meats, roasted lamb, veal, game, hard cheeses with character.
Serving temperature: Recommended around 16°–18°C.
