Tsarev Brod Winery is a Bulgarian winery with a distinct identity, located in Northeastern Bulgaria, known for its focus on local terroir and the creation of wines with a pure, authentic character.
Varietal composition: Blend of selected red varieties (typical of the “Evmolpia” series).
Terroir: The vineyards are located in the Danube Plain, a region with a strongly continental climate, hot summers and cool autumns. The soils are black earth and limestone, which contribute to good structure, ripeness and fruit intensity.
Vinification: The grapes are harvested at optimal ripeness. Fermentation takes place at a controlled temperature with careful maceration to extract color and tannins. The wine is vinified mainly in stainless steel vessels in order to preserve the fresh and fruity character typical of the harvest.
Organoleptic characteristics
Aroma: Fresh and fruity – notes of red and dark berries, cherry and plum, complemented by light spicy nuances.
Taste: Medium body with a soft texture, balanced acidity and a pleasant, juicy finish.
Food pairing: Suitable for traditional Bulgarian dishes, roasted meats, pasta, pizza and semi-hard cheeses.
Serving temperature: 16°–18 °C.
Aging potential: 3–4 years after harvest.
