Cantine Damilano is a historic family winery from Piedmont, known for its dedication to autochthonous varieties and its precise, elegant style. Founded at the beginning of the 20th century, the winery today continues the tradition of high quality and terroir expression. The Dertona series shows the remarkable potential of the Timoraso variety - a revived old Piedmont variety that has acquired cult status for its minerality and ability to age.
Variety: 100% Timoraso
Terroir: The production area is Tortona and therefore the wine bears the name Derthona, which is the ancient Latin name for the city of Tortona - a sign of respect for the local origin of the variety. The wines from Colli Tortonesi come from a hilly area in the south-eastern part of Piedmont. The soils are rich in limestone, marl and clay, which gives density, salinity and a pronounced mineral character. The climate is continental, with warm days and cool nights, which promote the development of complex aromas and freshness.
Vinification: Hand-harvested and carefully selected grapes. Gentle pressing and fermentation at a temperature between 16 and 18 degrees for about 10 days in stainless steel tanks. Aging on the fine lees for additional density, texture and complexity. The wine is bottled with minimal intervention to preserve the natural character of Timoraso.

Food pairing: white meats, risotto, pasta with white sauces, grilled fish, seafood, mature cheeses and gastronomic starters. An excellent choice for lovers of fuller-bodied white wines with character.
Ageing potential: One of the most remarkable qualities of Timoraso is its aging potential. Timoraso Dertona can develop beautifully in the bottle for 5–10 years or more, acquiring complex aromas of honey, dried fruits and herbs over time.
Serving temperature: 10°–12°C
