DiVes Estate Winery is a boutique winery located on the historic hill of Simeonova Mogila near Aheloy, a Black Sea wine region with a unique terroir and maritime climate.
Varietal composition: 100% Sauvignon Blanc
Terroir: Vinified grapes from our own vineyards in the Simeonova Mogila area, on sandy-clay soils rich in limestone and saline nature. The climate is moderately continental with a strong maritime influence - warm summers, breezes and cool nights, which create an excellent group of acidity and aromatic clarity
Vinification: Hand selection of grapes, accompanied by a cold stay to preserve freshness. Fermentation takes place at a controlled temperature in stainless steel vessels, followed by a short aging on fine lees, which gives texture without suppressing the varietal character.
Organoleptic characteristics
Aroma: Fresh, citrus profile with notes of green apple, lime, fresh herbs and acacia blossom
Taste: Medium-bodied with harmonious acidity, juicy fruit nuances and a light mineral finish
Food pairing: Excellent with seafood, fish, chicken dishes, fresh salads and soft cheeses
