Produced by the Monastery Winery – located in the village of Lesichovo, Pazardzhik region, the winery focuses on fresh white wines typical of the Thracian Lowlands.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located in the Thracian Lowlands and are influenced by the temperate continental climate. The soils are sandy-clay with good drainage. The climate and soils provide a characteristic freshness and fruit profile.
Vinification: The grapes are hand-picked and carefully selected. After cooling, fermentation takes place at a controlled temperature in steel vessels to preserve the fresh fruit aromas.
