Varieties: Sauvignon Blanc, Viognier
Terroir: The vineyards are located in the southern regions of Bulgaria, with soils that are predominantly sandy-clay and limestone, providing good drainage. The climate is temperate continental with Mediterranean influence, which creates optimal conditions for growing Sauvignon Blanc and Viognier, preserving the freshness and aromas of these varieties.
Vinification: The grapes are harvested by hand and undergo fermentation at a controlled temperature in steel vessels. The wine is not aged in oak barrels to preserve the freshness and fruity aromas of the varieties.
Organoleptic characteristics
Colour: Light yellow with greenish hues.
Aroma: Fresh and intense, with notes of citrus, tropical fruit, peach and light floral accents.
Taste: Light to medium body with high acidity, giving the wine a crisp and refreshing structure. The taste is balanced and fruity with a slightly mineral aftertaste.
Food pairings: Suitable for salads with citrus dressings, seafood, fish dishes, pasta with light sauce and white rind cheeses.
Serving temperature: 8°–10°C
Aging potential: Up to 3 years, the wine will retain its freshness for the first 2 years after harvest.
