The Vineyards Selection series includes wines created from selected vineyards around the village of Troyanovo – a village with unique soils and climatic conditions, near the Black Sea coast.
Varieties: Sauvignon Blanc and Chardonnay
(a blend with a harmonious combination of the freshness of Sauvignon Blanc and the softness of Chardonnay)
Terroir
The vineyards are located near the village of Troyanovo, in the PGI Thracian Plain – a region known for its ancient winemaking traditions. The soils are light and well-drained, with a high mineral content. The climate is temperate-continental with a Black Sea influence – hot summers and cool nights, which helps balance sugars and acids and preserves the aromatic profile of the white varieties.
Vinification
The grapes are hand-picked early in the morning to preserve freshness and aromas. After careful sorting, fermentation takes place at low temperatures in stainless steel vessels. The wine is not aged in oak to preserve the natural fruit expression and varietal character.
Organoleptic characteristics
Color: Pale straw yellow with greenish reflections, clear and brilliant.
Aroma: Expressive and fresh, with dominant notes of grapefruit, peach, passionflower, pineapple and light grassy nuances from Sauvignon Blanc.
Taste: Medium-bodied with pronounced acidity and lively freshness. Fine, well-structured taste with citrus notes and a long, slightly exotic aftertaste. The Chardonnay adds softness and balance without dominating.
