Variety: 100% Sauvignon Blanc
Terroir: The vines are planted on the eastern slopes of the Shipkata Sauvignon Blanc vineyard and in the northern part of the Prisovete vineyard, with an east-west exposure, at an average altitude of 290-350 meters at a 10% slope. The soils are alluvial with the presence of clay and sediments, with a high content of carbonates and the ability to retain a large amount of water. The unique microclimate in the area of the village of Mogilovo is characterized by large temperature amplitudes, northern air currents from the wide valleys; mild winters, warm summers and an optimal ratio between sunshine and precipitation.
Viticulture: The plants are of French and Italian origin, with an average age of 15 years. The formation is single Guyot (vertical shoot positioning), the density is 5000 plants per hectare. The yield is controlled to 9-10 tons/ha. The production is regulated once, when the shoots are 15-20 cm high, the so-called green pruning.
Vinification: The harvested grapes are immediately transported and cooled in a cold storage room. They are sorted manually in two stages: first, the whole bunches are sorted, the bunches are separated and the sorting of the grapes begins. The harvested and selected grapes are gravitationally fed into a press to separate the grape juice. Cold maceration is carried out in order to extract the maximum aromas from the skins. Then it is drained and delicately pressed in a stainless steel container. For a period of several days, the juice remains in the container to clarify, then it is decanted into a new container and seeded with yeast. Slow alcoholic fermentation begins at a controlled temperature. After fermentation, the wine is cooled and left on the lees for a certain period of time, with batonage (raising of the lees) performed if necessary. The process ends with the separation of the wine from the lees. This is followed by filtration, clarification, blending and bottling.

Aroma: Intense aromas of ripe pear, melon and juicy lemon intertwine with elegant herbal notes of lemongrass and elderflower
Taste: Fresh, playful wine with a light body and excellent balance, with citrus-herbal accents and a long, mineral finish. The intense flavor is dominated by a citrus tone, the aftertaste is persistent and memorable.
