Chateau Kopsa is a family winery located near Karlovo, in the heart of the Rose Valley. The winery has its own vineyards, located on hilly terrain with a favorable climate, which allows the creation of elegant wines with a pronounced individuality.
Variety: Chardonnay
Terroir: The vineyards are planted at the foot of the Stara Planina Mountains, on carbonate soils with a southern exposure. The area is characterized by cool evenings, significant elevation change and long sunshine, which allows the grapes to ripen slowly and accumulate aromatic intensity.
Vinification: The grapes are harvested by hand and carefully sorted. After soft pressing, the must ferments at a controlled temperature. Part of the wine is aged briefly in Bulgarian oak, in order to add complexity, but retain the fresh and fruity character of the variety.
Organoleptic characteristics
Color: Straw yellow with golden reflections.
Aroma: Complex and elegant – notes of white peach, ripe apple, pineapple and fine vanilla.
Taste: Full-bodied and well-structured, with good freshness and a slightly buttery finish with a hint of oak maturity.
Food pairing: Suitable for roast chicken, salmon, white meats with sauce, as well as hard cheeses.
Serving temperature: 10°–12°C
Aging potential: Up to 4 years after harvest
