Eugenio Collavini – a renowned family winery from Friuli-Venezia Giulia, known for its precise, elegant style and attention to detail. The grapes for the Dei Sassi series come from their selected vineyards in Collio DOC – one of the most famous terroirs for white wines in Italy.
Terroir: The vineyards are located on the typical Collio “ponca” soils – a combination of loose sandstone and marl, rich in minerals. The region offers an ideal climate: warm days, cool nights and constant winds, which contribute to a pronounced freshness and minerality in the wines.
Vinification: The grapes are hand-picked and undergo careful selection. After gentle pressing, fermentation takes place at a controlled temperature in stainless steel tanks to preserve the pure varietal aroma. Some of the wine may be aged briefly on the fine lees for more density and complexity, characteristic of the Collavini style.
Organoleptic characteristics
Aroma: Pronounced and subtle nose with notes of green apple, pear, citrus peel, white peach and light mineral nuances, complemented by delicate floral accents.
Taste: Elegant, fresh and harmonious. Well-structured body, juicy acidity and a pure fruit profile. The finish is long, mineral and slightly salty, typical of Collio.

It goes well with seafood, grilled fish, seafood pasta, fresh salads, risotto, white meats and light cheeses.
