Domaine Louis Moreau is a traditional family winery based in the heart of Chablis, with roots dating back to the late 18th century. The winery is among the respected producers in the region, owning plots in some of the best terroirs of Chablis. Its philosophy is aimed at minimal intervention and expressing the pure minerality of the variety and the soils.
Varietal composition: 100% Chardonnay
Terroir: The vineyards are located on the typical Kimmeridgian limestone soils of Chablis, rich in fossils. The temperate-continental climate with cool nights and moderate daytime temperatures contributes to a delayed ripening of the grapes, which allows the development of freshness and pronounced minerality.
Vinification: After hand harvesting, the grapes are gently pressed and fermentation takes place in stainless steel tanks at a controlled temperature. The wine is aged on fine lees for several months, without the use of oak, to highlight the authentic character of the terroir.
Organoleptic characteristics
Aroma: Elegant nose with notes of green apple, white blossom, lemon peel and a characteristic minerality.
Taste: Fresh and clean, with a fine texture, distinct acidity and a long, salty finish.
Food pairings: Excellent with scallops Saint Jacques, white fish tartare, goat cheese or chicken with lemon sauce.
