Pouilly Fiusse is the name of a village in the Maconnais region, southern Burgundy. The grapes come from plots between 35 and 90 years old. Aged in a mix of new and second-fill oak barrels for 12 months. The wine is characterized by density, structure and light minerality. Exceptional complexity and good integration of oak with aromas of citrus - grapefruit, peach, exotic fruits - pineapple, floral nuances, acacia, honey, butter, brioche, vanilla. It can be consumed in the next 7-8 years.

Hospice wines were auctioned for the first time in 1859, with the aim of maximizing profits for the Bonn hospital. For many years, the principle of the auction was based on candles, or the last bidder was determined when two candles went out at the same time after a long burning time. Today, this practice is only used for the "Piece de Charite" or charity barrel auction. Over the years, Hospices de Beaune has become the most famous charity wine auction in the world.
The 14 million collected in 2018 allows the Hospital de Beaune to subsidize numerous projects and all residents of the city benefit from this.
The Hospices de Beaune auction takes place every third Sunday in November, marking the end of the wine production cycle. One by one, each of Domaine des Hospices' fifty wines have been sold to wine lovers around the world.
The fifty Hospices de Beaune wines were sold "en primeur" at auction or in the form of futures. They are always from this year's crop. At the time of the auction, the wine has just finished fermentation and is still young. Once sold to the customer, it is left to age with a trusted professional grower with knowledge and experience such as Albert Bichaud, a highly reputable Burgundy company or a top auction buyer for the last 20 years. The aging process lasts between 12 and 18 months, before bottling and shipping to the customer. This part involves a lot of skills, knowledge, technological experience and knowledge.
