Pascal Jolivet is one of the most dynamic wineries in the Loire Valley, with a philosophy based on minimal intervention and maximum expression of the terroir. He works mainly with vineyards in Sancerre and Puy-Fume, using natural yeasts and gravity processes to achieve purity, elegance and authenticity in his wines.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located on the three classic types of soil for Sancerre - limestone (caillottes), flint clay (silex) and clay-limestone terrains (terres blanches). These differences contribute to the mineral depth, firmness and aromatic spectrum of the wine. The cool climate and the large amplitudes between day and night preserve the lively acidity and finesse.
Vinification: Hand picking and selection of the grapes, followed by light pressing and fermentation with their own yeasts at a controlled temperature. Aged only in stainless steel tanks on fine lees for about 4 months. The wine does not undergo malolactic fermentation to preserve its bright freshness.
Organoleptic characteristics
Aroma: Complex and clean, with nuances of white peach, green apple, citrus peel and a light flinty accent.
Taste: Elegant and firm, with fresh acidity, mineral structure and a pronounced fruity finish.
Food pairings: Excellent with goat cheese, fish tartare, mussels, salads with herb dressing and asparagus dishes.
Serving temperature: 9°–11°C
Aging potential: Up to 5 years after harvest
