Terroir
The vineyards are located on the southern slopes of the Rhodope Mountains, near the town of Perushtitsa. The region is characterized by a warm and dry climate, an abundance of sunny days and light mountain winds, which keep the grapes healthy and aromatic. The soils are mainly sandy-clay with limestone layers, giving the wine a pronounced minerality and freshness.
Vinification
The grapes are harvested early in the morning, when temperatures are lower, to preserve their natural freshness. After delicate pressing, the must is clarified and fermented at a low temperature (12–14°C) in stainless steel tanks. Without aging in oak, to emphasize the varietal character and the pure aromatic profile.
Organoleptic characteristics
Color: Light yellow with greenish reflections, crystal clear.
Aroma: Fine and fresh, with nuances of green apple, pear, citrus and white flowers, complemented by a light herbal note.
Taste: Medium body, elegant acidity and mineral accent. Juicy and clean finish with citrus freshness and a hint of peach and lime.
Food pairings
Suitable for grilled fish, seafood, citrus salads, goat cheese and light vegetable starters. Also an excellent choice as an aperitif in the warmer months.

Aging potential: 2–3 years
