Rosidi Winery is a boutique family winery focused on creating signature wines with a distinct personality and terroir. Located in the Nikolaevo region, at the foot of the Stara Planina Mountains, the winery works with limited batches and minimal intervention, with each bottle reflecting the philosophy of quality over quantity.
Varietal composition: 100% Gewurztraminer
Terroir: The vineyards are located on limestone and sandy-clay soils with good drainage. The microclimate in the area is temperate continental, with a contrast between warm days and cool nights - a factor that allows for the preservation of freshness and the development of the characteristic aromatic profile of the variety.
Vinification: The grapes are picked by hand and undergo careful selection. After a short cold maceration, fermentation takes place at low temperature in stainless steel vessels. The wine is aged on the fine lees for several weeks, without contact with oak, in order to emphasize the aroma and texture.
Organoleptic characteristics
Aroma: Expressive and exotic nose with dominant notes of lychee, rose blossom, melon and indriche.
Taste: Full-bodied and smooth, with a slight sweetness, balanced acidity and a spicy-floral finish.
Food pairings: Excellent choice with duck breast with fruit sauces, spicy Thai cuisine, sushi with wasabi or mature soft cheeses.
Serving temperature: 9°–11°C
Aging potential: Up to 4 years after harvest
