Terroir - Gavi DOCG area
Gavi is one of the best areas in Piedmont for white wines.
Soils: limestone-marlstone, rich in minerals, with inclusions of sand.
Climate: temperate and airy, with a good amplitude between day and night temperatures - a key factor in preserving acidity and freshness.
Variety: 100% Cortese - a regional variety with finesse, elegance and a distinctive mineral character.
Vinification
The grapes are harvested by hand. Gentle pressing and fermentation at low temperatures in stainless steel tanks preserve the aromatic purity. The short aging on fine lees adds volume, structure and complexity without compromising freshness.
