Variety: 100% Dimyat
Terroir: The vineyard, marked as a "single vineyard", is located on hilly terrain with a southern exposure, on clay-limestone soils rich in minerals. The temperate climate, cool nights and good sun exposure create a favorable environment for preserving freshness and developing aromatics in this Bulgarian variety.
Vinification: The grapes are hand-picked early in the morning, then cooled and carefully pressed. Slow fermentation at low temperature in stainless steel vessels follows. The wine is aged for a short time on the fine lees to enrich the structure and depth of flavor, without malolactic fermentation.
Organoleptic characteristics
Color: sparkling pale yellow
Aroma: aroma of flowers, acacia, honey and lemon, a slight hint of vanilla
Taste: fresh, with a soft structure, the taste is dominated again by honey, lemon and vanilla
Food pairing: Ideal with baked trout, vegetable pies, salads with yogurt and dill, or fresh goat cheeses.

In order to preserve peace between the two countries, she agreed and said a long farewell to her homeland and her beloved places. From her tears, vines sprouted and gave a wonderful grape - Dimyat. From it they made a delicate and aromatic wine...like the tears of Kera Tamara."
