Dimyat Bulgarian Heritage – an elegant white wine from Izba Karabunar, created as part of the series dedicated to Bulgarian wine traditions and local varieties. The 2025 vintage presents the classic character of the Dimyat variety in a modern and fresh style, combining fruity purity and pleasant lightness.
Terroir:
The vineyards are located in the Thracian Lowlands – a region with a favorable temperate continental climate, warm days and cool nights. The soils are fertile and well-drained, which allows the Dimyat variety to develop its typical fresh and aromatic profile.
Vinification:
The grapes are harvested at optimal ripeness in order to preserve freshness and aromas. After careful pressing, fermentation takes place at a controlled low temperature in stainless steel vessels. The wine is not aged in oak to preserve its clean, light and fruity character.
Organoleptic characteristics
Color:
Light straw yellow with fresh greenish hues.
Aroma:
A subtle and fresh nose with nuances of green apple, citrus and white flowers, complemented by delicate grassy notes.
Taste:
Light to medium body with pleasant refreshing acidity and a balanced fruit profile. The finish is clean, harmonious and refreshing.
Food pairing:
Suitable for salads, fish, seafood, white meat and light cheeses. Excellent choice for everyday consumption or a light aperitif.
