Variety: 100% Sauvignon Blanc Origin: Sauvignon Blanc 35 Parallel combines the characteristic features of the Curico and Elqui valleys. The result is an intense and well-balanced wine. Curico contributes fruit and citrus notes, while Elqui provides the mineral tones. During the entire process, extreme attention is paid to preserving the fruit potential of the grapes. To achieve complexity, the grapes are even given a short "rest" on the lees. The wines are fruity, with pleasant acidity. Harvesting: The grapes are harvested by hand, the average yield is 11 t/ha. Vinification: Cold maceration is carried out for 12 hours at a temperature of 10°C, after which the grapes are pressed to enhance the aromas. Purified must is fermented at a low temperature, after which the light sediment is kept in suspension. Aging is in steel tanks. Characteristics: Very intense and elegant wine. Dominant aromas of tropical fruits and grapefruit in combination with fresh mineral notes. Fruity wine with touching acidity. It can be consumed immediately or matured for no more than 2 years. Combining with food: Perfectly combined with oysters and salads, it can also be consumed as an aperitif. To be served at 10 to 12°C.
