E.Mirolio is a modern family winery located in the area of the village of Elenovo, in the southern part of the Thracian Lowland. The winery grows both international and local varieties, with a focus on sustainable practices and certified organic farming.
Varietal composition: Mavrud and Rubin
Terroir: The vineyards are located at about 300 m above sea level on well-drained clay-limestone soils. The Nova Zagora region is characterized by hot summers, mild winters and good ventilation, which ensure healthy development of the vines and excellent phenolic potential of the grapes.
Vinification: The grapes are hand-picked and sorted. After maceration at a controlled temperature, fermentation takes place with natural yeasts. The wine is aged for 8–10 months in stainless steel vessels and partially in Bulgarian oak barrels, without filtration and with minimal intervention to preserve its natural character.
Organoleptic characteristics
Aroma: Complex nose with nuances of dark berries, cherry, spices and earthy accents.
Taste: Medium body, elegant tannins, balanced acidity and a long spicy-floral finish.
Food pairing: Suitable for roast lamb, duck with herb sauces, mature hard cheeses or grilled mushrooms.
Serving temperature: 16°–18°C
Aging potential: Up to 6–7 years after harvest
