Damyanitza is among the emblematic wineries of Southwestern Bulgaria, with a history dating back to the 1940s. Today, the winery operates on a sustainable model with attention to local conditions, using certified organic practices and a manual approach to viticulture and vinification.
Varietal composition: 100% Chardonnay
Terroir: The Chiflik Livadi vineyard is located at the foot of the Pirin Mountains, near Sandanski, on sandy-clay soils with southern exposure. The microclimate is strongly influenced by the mountains and the Mediterranean, with warm days and cool nights, which contributes to the development of rich aromatics and good acidity.
Vinification: After hand harvesting, the grapes are cooled and carefully pressed. Fermentation takes place in stainless steel vessels at low temperature with wild yeasts. The wine is aged for a short time on the fine lees, without contact with oak, in order to preserve the natural freshness and varietal character.
Organoleptic characteristics
Aroma: Fine and fresh, with notes of pear, melon, citrus peel and a hint of walnut shell.
Taste: Harmonious and elegant, with lively acidity, delicate structure and a slightly mineral aftertaste.
Food pairings: Excellent with baked sea bream, zucchini and parmesan risotto, avocado salad or wild chive omelet.
