Produced by Kapatovo – a family estate located in the Struma River Valley, near the village of Kapatovo. The winery focuses on creating wines with a pronounced terroir character, using modern technologies and hand-picking of grapes.
Varietal composition: Sauvignon Blanc and Viognier
Terroir: The vineyards are located on sandy-clay soils with good drainage. The climate is moderately continental with the influence of the nearby river, which favors slow ripening and the accumulation of aromatic compounds.
Vinification: The grapes are hand-picked and undergo careful selection. After cooling, fermentation takes place at a controlled temperature in stainless steel vessels to preserve the freshness and fruity aromas of the wine. The wine is aged on the fine lees for additional complexity.
