By vinifying Sauvignon Blanc, the leading grape variety of the estate, Domaine UBY offers us a gourmet wine that is suitable for the whole family in important moments.

Vinification 
Harvesting is done at night to preserve the freshness of the grapes. The grapes are transported to the cellar for natural maceration. This is followed by pneumatic pressing, stabilization, low temperature fermentation and aging on fine lees to add complexity to the wine. For this alcohol-free wine, an important step has been added to the vinification process: the dealcoholization process, preserving the wine's aromatic profile. 
The technique consists in evaporating all the alcohol contained in the wine through a natural process of vacuum evaporation at a low temperature, around 30°C, by passing through a distillation column. 
Tasting notes:
Color: quite pale, with light green highlights.
Nose: notes of white peach and grapefruit.
Taste: relatively dry, the taste is both fresh and soft, offering delicious citrus notes between lemon and grapefruit.
To take full advantage of the aromatic potential of this wine, we advise you to drink it within 18 months of bottling and serve it at around 10°C.

The freshness of the Sauvignon variety will allow the wine to go well with grilled fish and sushi, but you can also simply serve it as an aperitif.
