Villa Yustina was founded in 2006 in the village of Ustina, at the foot of the Rhodope Mountains. The winery is known for its focus on local varieties and terroir wines, working with its own vineyards near the village of Nikolaevo, where it combines tradition with modern oenology.
Variety: Rubin
Terroir: The vineyards are located in the Plovdiv region, at an altitude of about 300 m above sea level. The soils are cinnamon forest and limestone, with good drainage. The climate is transitional continental, with warm days and cool nights, ensuring good ripeness and aromatic concentration of the variety.
Vinification: The grapes are hand-picked in the early morning hours. Cold maceration follows to extract delicate color and aromas, and fermentation takes place at low temperature in stainless steel vessels. The wine is not aged in oak to preserve its fresh and fruity character.
Organoleptic characteristics
Colour: Light pink with a hint of peach.
Aroma: Intense nose of red apple, raspberry and pink grapefruit, with floral nuances.
Taste: Fresh and elegant, with balanced acidity and juicy fruit structure. The finish is slightly mineral and refreshing.
Food pairing: Excellent with salads, grilled fish, pasta with vegetables or soft cheeses.
Serving temperature: 8°–10°C
Aging potential: Best consumed within 2 years of harvest
