Domaine Roc de L’Abbaye is a family-run winery in Saint-Satur, Loire Valley, with a history dating back to the Middle Ages and vineyards of stiite and merlot soils. The Mollet family has modernized the winery but maintains the traditions of the terroir style with a flor de la approach to boutique blends with character.
Varietal composition: 100% Pinot Noir
Terroir: The vineyards are located on hills with a strong silex (flint) soil, which gives minerality and freshness. The climate is temperate, with daily temperature amplitudes that emphasize the elegance and acidity of the wine.
Vinification: The grapes are hand-picked from crops of 10-25-year-old vines. Cold maceration is used for up to 5 hours, followed by careful pressing and fermentation in steel tanks at 14-18°C for 15-20 days. Aged briefly on fine lees without contact with oak to preserve the purity of the aroma.

Aroma: fine and fresh emanation of rose, raspberries, sparkling peach, apple and floral nuances
Taste: dry, crystal clear, with pronounced acidity and fruity length - red berries, grapefruit and fine minerality
Food pairing: ideal with sushi, seafood, chicken salads, pasta with light sauces, herb-based sauces and fine cheeses
Serving temperature: 8°–10°C
Aging potential: 2–3 years
